Crown Sydney’s excellent Italian restaurant, a’Mare at Barangaroo, offers a sublime “working Italian” menu for $180 per person with all the tableside theatre and delicacies you’d expect on a Mediterranean getaway.

Speaking to FEMAIL, a’Mare chef Alessandro Pavoni said the menu “is designed to be a spectacle and bring the theatricality of table service to every customer for every course.”

“It should be juicy but not soggy,” Alessandro said of the perfect bruschetta.
When FEMAIL asked what the secret was to a perfect pasta sauce, Pavoni was happy to confess.
‘The perfect pasta sauce is when it melts perfectly with the pasta and has the right density and quantity. There shouldn’t be too much or too little sauce, you have to find a balance,” he stated.
‘Mantecare is a key step in the process, you need to mix the pasta with the sauce and some of the pasta cooking water to allow them to fully combine and create a unified dish.’
Alessandro shared that at dinner time he is a devotee of sparkling wine with Italian food.
“I can have a whole meal with Franciacorta or Champagne, I love a Blanc de Blanc,” she said.
The palate-cleansing sgroppino is made with Malfy gin and Aperol.
The elegant Crown Sydney restaurant has generous indoor and outdoor seating.
He also shared his trick for a perfect bruschetta.
“It should be moist but not soggy, the bread should have that all-important crunchy texture but should also have absorbed some of the seasoning and flavors of the ingredients,” he said.
