A hidden shop in Sydney quietly produces cakes that some have called “the best in Australia”.
Blood’s Bakery is a cult bakery in Ultimo that offers “amazing” cakes and savory desserts, but only to those in the know.
Founded in 2021 by chef Alex Lynn, of Mr Wong and Ms G fame, this low-key baker only sells cakes to people who slide into their DMs.
The menu is posted every Tuesday and you must order directly from Blood’s Bakery’s Instagram account to get pizzas that have people saying, “The hype is real.”
The “secret” bakery currently has just six reviews on Google, but thanks to a dedicated following, it still manages to sell out of its entire menu every week.
Antonio Khant, the man behind TikTok account thepieboi, shared a “delicious” video of his first bite of a coveted pie from Blood’s Bakery.
“I just got my hands on one of the most unique cakes in Sydney, maybe even Australia,” Antonio said.
“From the start, it smells so buttery, I’ve never smelled anything like it.”
The Chasu pork belly and egg ramen pie ($14) from Blood’s Bakery in Sydney is the stuff of pie legend, but only among foodies.
The man behind TikTok account thepieboi couldn’t wait to get his hands on one of Sydney’s coveted pies which must be ordered via direct message on Instagram.
Showing off the Instagram-famous Chasu Pork Belly Pie and Ramen Egg Pie at $14 for one or $23 for a box of two “baked in-house”, the Sydney foodie called the pie “insane”.
Antonio bit into the thick morsel, dipped it in some chili oil and squeezed the ramen egg yolk on top: “It’s so good, it tastes like something you’d get at a restaurant.”
According to the foodie, it’s the layers of butter-soaked crumbly dough folded over an umami-rich filling of chasu, pork belly and mushrooms that make this pie the perfect fusion of Asian and French flavors.
Chef Lynn slowly cooks pork belly in a mixture of ginger, sake and soy and then adds it to a ramen-like broth, finishing it with sesame, seaweed and shallot.
“This cake is amazing, one of the best I’ve had in Sydney,” Khant added.
The Sausage Ramen Roll is another Asian-inspired pastry from Blood’s Bakery that has Sydney food lovers in a state of shock.
Blood’s Bakery’s ‘Cornflake Tart’ features a delicate creamy custard tinged with a dollop of stewed strawberry and rhubarb jam, the sweet pastry topped with crunchy cornflakes.
Tormented fans were salivating over the video, with one woman agreeing that Chef Alex makes the “baddest” pies in Sydney.
“It looks amazing,” another woman agreed.
One Kiwi joked that Antonio’s Australian nationality made him unqualified to judge the cake.
“I can only trust a New Zealander when they ask me for cake recommendations in Australia,” she said.
As interest in Chasu cake is on the rise, the bakery is accepting pre-orders for August 23 and 24.
Other gems on Blood’s Bakery’s menu include the ‘cornflake pie’ with strawberries and rhubarb and milk custard, and a ramen-style sausage roll.
Those too tech-shy to order via Instagram can also find Blood’s Bakery pies at Solstice cafe in the Inner-West suburb of Summer Hill every Saturday.
“I’m obsessed. I run to Solstice Cafe to buy their products. They make the perfect weekend treat and the flavor combinations are unique and perfectly done,” said one fan.
“Amazing cake! A must try. It’s a real hidden secret,” added another man.
