How to cook kutya for Generous evening: selected recipes called kutya

Very soon – on the night of Monday, January 14, Ukrainians will celebrate Old New Year (the people call the holiday Generous Evening).

On the eve of the Old New Year, it is customary to prepare a dish of Kutia (Sochi, the memorial Kutia is called Volvo) from whole wheat grains.

For Katya, they made a dressing of meat, lard, or poured the finished porridge with honey, syrup, or jam. If kutia was made sweet, then poppy seeds and raisins were put in porridge. On a generous evening, you need to cook the same kutya – generous.

It is believed that the richer the cooked kutya is, the better the family will harvest and its wealth will be higher. Glavred decided to advise how to cook popular types of kutya: kutya from wheat, kutya from rice and kutya from bulgur.

Secrets of cooking poppy on kutyu

Poppy seeds for dressing kutya need to be crushed before the appearance of milk (whole poppy seeds are not absorbed in the human body). Poppy should be rubbed only after the grains have been washed and soaked in boiling water.

On one part of the poppy you need two parts of boiling water (100 grams of grains – 200 milliliters of boiling water). Poppy filled with boiling water should be covered with a lid, and after it absorbs the liquid, boil the grains for a few minutes.

When poppy is boiled, you need to pour sugar into it and grind before the appearance of milk. For grinding poppy, you can use an immersion blender, clay or stone mortar, as well as a pepper grinder.

Traditional wheat kutja

Ingredients for cooking one of the main dishes for the Old New Year: 100 grams of ground wheat, 400 milliliters of water, 100 grams of poppy, 100 grams of raisins, 100 grams of walnuts, a pinch of salt and butter, honey to taste

How to cook Kutya from wheat

Put cold water in a saucepan, add cereal into it and put it on a fire, then put salt in the water. After boiling, reduce the heat and boil the cereal for about 20 minutes. Porridge is considered ready when its grains become soft.

Discard the finished porridge in a colander, rinse and wait until the excess liquid flows. Then pour porridge into the pan, put it on a small fire for a few minutes and add butter. Move the porridge carefully and remove from the heat when the butter has melted.

Wash the raisins thoroughly and soak in warm water (dried fruit should not be soaked in boiling water) for about 20 minutes. Crush the nuts into a crumb, and then drain the excess water from the raisins. Mix the nuts with raisins, poppy seeds, honey and send all the ingredients in the porridge.

“Eccentric” Kutya from rice

Ingredients for making kutya for a generous evening: a glass of rice, a pinch of salt, half a cup of poppy, 100 grams of raisins, 100 grams of walnut, 100 grams of almonds, 50 grams of large and bright dried apricots, honey – to taste.

How to Cook Cookies from Rice

Wash the rice thoroughly in a saucepan, then pour a glass of cold water into it and put it on a fire. After boiling grits need to cook for 2-3 minutes. Cook the cooked rice in a colander, rinse with cold water and pour back into the pan.

Then again fill the grits with cold water, add a pinch of salt and cook until the rice is completely ready. When the porridge is ready, again throw it in a colander, wait until the excess liquid goes away, and then transfer the rice to the plate.

Crush the nuts, and dried apricots thoroughly wash in warm water. Mix the ground poppy seeds, honey and nuts and add the ingredients to the porridge. Cut dried apricots into large cubes and garnish with kutyu.

Appetizing kutya from bulgur

Ingredients for making kutyi from bulgur: 200 grams of bulgur, about 30 grams butter, a pinch of salt, 100 grams of poppy, 100 grams of raisins, 50 grams of prunes, 50 grams of figs, 100 grams of walnuts, honey – to taste and bright candied fruits.

How to cook kutyu

Wash the bulgur and melt the butter. Pour the cereal into the pan, pour the oil into it and fry the bulgur over low heat, stirring constantly, for two minutes.

Roasted cereal sends in a saucepan and covers with cold water. Liquid should be poured so much that it is 1-2 fingers above the level of bulgur. Then add salt to the pan and boil the porridge for about 12 minutes.

Cook boiled bulgur to a colander, wait until excess liquid flows, and pour the porridge in a plate.

Wash the raisins, prunes, and figs, soak them, and then cut them into small cubes. Chop nuts into the medium crumb. Shift sliced dried fruits with nuts, poppy seeds, and honey, and then send all these ingredients to porridge. From above decorate kutia candied fruit.
