Stay-at-home mother shows off the incredible school lunches that she makes for her boy every morning

Stay-at-home mother Nancy Du, 43, made headlines earlier this year when she shared her overflowing bento lunch box and accessory collection, which requires two cupboards and four separate storage shelves.

And now, three months later, the devoted mother in Melbourne has shared some of the imaginative lunches. She makes her little boy Jack, five, since he went to school.

Every morning Mrs. Du spends an hour creating a nutritious lunch box for her partner Pat, 32, and about 20 minutes of perfecting lunch for Jack – complete with small characters, colorful snacks and food cut into playful forms.

She then chooses a box from her colossal collection to complete her creation.

& # 39; Because Jack is still starting to have lunch with the toddlers, I have to have lunch quickly and easily for him, & # 39; said Du, the founder of Come Bento With Me.

& # 39; I make two different lunches most days – one for my partner who has almost the whole dinner left plus extra side dishes and one for my son with some leftovers, but mostly easy to eat.

& # 39; I ensure that there are proteins, carbohydrates, fruits and vegetables and that the lunches are colorful and as healthy as possible. His friendly is actually a junk-free zone, which is good if I try to pack unprocessed food for him. & # 39;

One of her favorite lunches is making a & # 39; kiddy version & # 39; made from a vegetable broth by cutting it in three and placing it on a skewer. She then adds small round rice balls or nigiri and some fruit.

Mrs. Du said she is constantly thinking of new ways to be creative and always plans meals in advance.

& # 39; I do my usual weekly shopping at my local supermarket and J Mart, a Korean supermarket and a Japanese online store, Ichiba Junction, & # 39; she said.

& # 39; For example, I buy frozen beef and pork from J Mart store and Ichiba Junction. The meat is delivered in one kilo of frozen packages that I store in smaller portions and that can give me around four to six meals, depending on what I make. & # 39;

Ms. Du says she is proud of the playful lunches she has devised so far and is always looking for new and inventive ways to brighten up their days.

& # 39; When I look back on my first lunches, I can see how far I have come. I get my inspiration from people I follow on Instagram, recipes that I come across from people I follow on Facebook and also like to give my own spin on things, & Du said.

& # 39; I also love browsing Bento & Co to see what new products they have – although I have collected a small collection and no longer want to buy, every time I look at it, I want to buy more to add add to my collection. & # 39;

& # 39; It really is no different than people who collect DVD & # 39; s, games for specific consoles, dolls or shoes. "I don't drink or smoke or take drugs, no recreation or anything else, and this is what I love to do," she said.

& # 39; I love food and I love cooking – cooking is my way of showing my family how much I love them and how much they mean to me. It is an added bonus that they love to cook, so I am blessed. & # 39;

& # 39; Jack is starting to be friendlier and that's how the Bento collection started, he's my inspiration behind all this, & # 39; said Du.

& # 39; I wanted to make him tasty lunches for the little ones. When I was growing up in a large family of seven children and both parents were working, my lunch consisted of an old sandwich and a Strassburg brand if we were lucky.

& # 39; I would always watch other children's lunches and be jealous of the tasty lunches they had, so I think I am making up for my lost childhood and want to offer my son and partner healthy, varied, and tasty lunches. ;

Mrs. Du also has 250 food picks, vegetable cutters, silicone cups, sauce bottles, nori-cutters and egg formers as part of her huge collection that she groups into categories and stores in stackable trays.

Jack also has 22 drinking bottles and half of which is made of stainless steel for summer insulation.

While some think the collection is exaggerated, Mrs. Du says she simply provides for her family that she could only dream of being there as a child.

& # 39; I was born in Vietnam during the Vietnam War and our family was lucky enough to escape and flee to Finland & # 39 ;, she said.

& # 39; From there we stayed for about seven years and then we were sponsored to go to Australia by our cousins.

& # 39; It gives me great joy to feed the people I love and see them enjoying my food. & # 39;

What is one of Nancy & # 39; s favorite recipes for lunch boxes?

Beef Gyudon

About 4 portions

ingredients

1 medium-sized onion cut into thin slices

1 spring onion chopped for garnish

1-2 teaspoon sugar. Depending on how sweet you want it.

3 tablespoons mirin (about 4 to 5 good splashes)

2 tablespoon boil sake (about 3 to 4 good splashes)

1 teaspoon of sesame oil (about 2 splashes)

2 tablespoon soy sauce (not dark) (about 3 good splashes)

150 ml dashi (if you use bonito powder, add 1 teaspoon at a time to 150 ml of boiling water and taste Add more if the taste is quite short.) Normally I add 1 1/2 to 2 teaspoons)

500 grams of very thinly sliced beef.

Method

1. Heat the frying pan. Once heated, add dashi, sugar, mirin, sake, sesame oil and soy sauce, stir and cover with lid and bring to the boil.

2. Once cooked, add onions and stir. Cover with lid and cook until soft.

3. If the onion is soft, add the steak and spread evenly and let it cook. Make sure the beef is well cooked. If the foam comes to the surface, shave off with a fine sieve or spoon.

4. Serve over hot steamed rice and cover with spring onions as a garnish.

NB: I am not a follower of measurements in the field of measurements. Instead I use the splash method, where I just splash the ingredient straight into the pan etc. I then taste it. If it needs more of something else, I splash more of what it needs. If you serve this for lunch, place this dish separately from the rice.
