A professional baker shared three simple tricks for baking a cake mix that tastes like ‘gourmet’.

So for those times when there’s less at hand – and less time – she suggests just using a cake and cake mix with a few tweaks.
While she favors Duncan Hines’ Classic White, she says any cake mix will do.
First, she says, refer to the ingredients on the back – then exchange new ones.

Other frequent bakers have suggested a similar trick, explaining that milk gives the cake a denser, richer texture than water.
“Instead of three eggs, you’re going to make five eggs,” she continues. More eggs add more fat, making the cake richer and more moist.
Finally, she says, “Instead of vegetable oil, double the amount and use melted butter.”
Other proponents of using butter instead of oil claim that it gives the cake a better flavor and also makes it denser – which can be especially useful for cupcakes when loaded with frosting. However, others say that exchanging one-to-one measurements is the way to go.
On the other hand, those who prefer oil say it makes for a more moist cake.
