Personal trainer and fit mom Sophie Guidolin shared her easy recipe for banana bread waffles – and she said they’re perfect for kids’ lunchboxes as a snack as well as afternoon tea.

The 31-year-old from Sydney revealed that her waffles take just five minutes to make and require a few household staples.

Sophie uses them for herself as well as for her children, saying they are a hit with friends and family alike.

“Banana Bread Waffles – yes, you read that right, and they tasted as AMAZING as they sounded!” Sophie wrote about her website.

To make them you will need three bananas, three eggs, 1/4 cup of milk, three tablespoons of coconut oil and a packet of hair Happy Way Banana Bread Mix, which costs $ 15.95 and is available online.

“To start with, I’m just going to mash three bananas with a fork in a mixing bowl and then add three eggs,” Sophie said in a video.

“Then just add a quarter cup of the milk you like best, three tablespoons of coconut oil, and a packet of Happy Way mix.”

Once you put all your ingredients in the bowl, the personal trainer said all you need to do is spray your waffle iron with a non-stick oil.

She likes Cobham Estate oil the most.

INGREDIENTS

3 bananas

3 eggs

1/4 cup of milk of your choice

3 tbsp coconut oil

1 pack of SG x Happy Way Banana Bread Mix

METHOD

1. Puree three bananas in a mixing bowl with a fork.

2. Add eggs, milk and coconut oil.

3. Stir in SG x Happy Way banana bread mix.

4. Lightly spray the waffle iron with nonstick cooking oil.

5. Gently scoop 4-5 tablespoons of the mixture into the waffle iron.

6. Close the waffle iron, place it on the stove and cook for 1-2 minutes on each side or until golden brown.

7. Let cool slightly and cover with yogurt, berries and Happy Way Cocoa powder.

“Once it’s done, all you have to do is take the waffles off the heat, add yogurt, berries and cocoa powder, and serve,” Sophie said.

“If I put them in the kids’ lunchboxes, I would probably leave them as is, but you can add nut butter or yogurt to make them even more delicious.”

“I have a lot of staples like my hearty mincemeat dish that I use for other dishes like nachos, stuffed potatoes, lasagna, and pasta baked later in the week,” she said.

This also means that after a busy day at work, she has to spend less time in the kitchen and can replenish the ground beef with what it needs.

Buying bulk food is one of the fastest ways to save money.

Sophie said she always picks up her ‘favorite’ oat milk for half price when she sees it, and buys two or three weeks worth of value before putting it away at home ready to drink.

Sophie said her favorite things to buy in bulk are oat milk (which has a long expiration date), rice, and preserves.

The mother also always buys meat in bulk and freezes it so that she is never caught without it.
