The ‘Royale with Cheese’ is the most expensive item on the menu at Sip & Guzzle, a cocktail bar in Manhattan.
It is made with one of the most expensive meats in the world and is served on a gold platter.
The dish was created by Mike Bagale, former executive chef at Chicago’s three-Michelin-starred Alinea, who oversees the kitchen at Sip & Guzzle.

Mike is known for his “progressive” and “experimental” cuisine, and his menu pays homage to Japanese culture using his “artistic eye” and the “world’s finest ingredients.”
For the Cheese Royale, use a Miyazaki A5 Wagyu sirloin and add a “slice” of house-made cheese made from aged white cheddar.
Then add layers of chopped onion and Japanese barbecue sauce made with wasabi, smoked soy sauce, shio koji, brown sugar, tomato and rice vinegar.
As for the bread, he uses the “fluffy” and “cloud-like” shokupan milk bread imported from the Ginza Nishikawa bakery in Tokyo.
The sandwich is served inside an “imaginative” gold box designed by HMH Iron Design, a New York-based metal fabrication company.
