Here’s What You Should Cook Every Night This Week (September 20-26)

If you’re anything like us, you’ve been craving the taste of fall for weeks. were talking hearty, cozy meals made with seasonal products and comforting ingredients. Here are seven dinners to cook up this week that are guaranteed to get you in the mood (even if you still haven’t accepted that) summer about).

1 large eggplant
3 large sweet onions
15 cloves of garlic
3 lemons
1 pounds Brussels sprouts
1 large red onion
3 medium carrots
3 stalks celery
1 pint cremini mushrooms
1¼ cups frozen peas
2 leeks
4 small pie pumpkins
4 ounces baby kale or spinach

Four 8- to 10-ounce tenderloin steaks
2lb chicken thighs with bone, skin to skin
1 rotisserie chicken
2 large eggs
1 pound ground beef

2 ounces grated Pecorino Romano cheese
4 ounces Parmesan cheese
1 stick unsalted butter
7 ounces heavy cream
8 ounces of whole milk

1 pound bite-sized dry pasta
6 ounces of polenta

Canned and Packaged Goods
One 28 ounce can of crushed tomatoes
One 28 ounce can of chickpeas
Canned anchovies
Two 32-ounce boxes of chicken stock
2 sheets of frozen puff pastry from the store
20 ounces store-bought marinara sauce
A 28-ounce can of pumpkin puree

Pantry Ingredients: extra virgin olive oil, salt, freshly ground black pepper, dried Italian herb seasoning, crushed red pepper flakes, dried oregano, nonstick cooking spray, Dijon mustard, whole grain mustard, honey, smoked paprika, all purpose flour, panko breadcrumbs, bay leaf, cayenne pepper

It’s as simple as seasoning the vegetables, putting them together in a baking tray of steaks and smother it all to savory perfection. Make sure to let the steaks rest for five minutes when they come out of the oven before slicing and serving.
