Fried feta pasta was all over TikTok in early 2021. Yes, this decadent dish went viral thanks to food blogger Yumna Jawadi, maker of Feel Good Foodie. Now she’s back with a new twist on her mega-popular recipe: pasta soup with baked feta.
Like baked feta pasta, “all you really need is some pasta, some tomatoes, and feta cheese,” Jawad tells Yahoo Life.
Intrigued? Here’s what it takes to make the soup:
Start by sautéing the tomatoes and a block of feta cheese at 400 degrees with a small diced onion and olive oil, along with the salt and pepper. Bake it for 35 to 40 minutes. “We just want to make sure the tomatoes burst and the cheese gets nice and mealy,” says Jawad.
Once the mixture is cooked, immediately pour it into a stockpot over low heat and season with basil, thyme and ground red pepper. Then add the garlic. “Give it a good mix and let that garlic cook for a while and get fragrant,” says Jawad.
Then add the vegetable stock and the cooked pasta. “It’s ready once it’s warmed up,” says Jawad. “The feta cheese gets nice and melty there — it almost becomes a cream sauce.”
For the finishing touch, add a few extra sprinkles of feta and torn basil.
Jawad says the end result is “so good”, noting that the feta cheese is “nice and tangy and creamy, the tomatoes tart and sweet, the pasta just gives it more savory….” It’s incredibly easy to make.
