Do you feel salty in the kitchen? Four types of salts and what you should use them for

  • Diamond Kosher: the ‘gold standard’ that can be used at every meal
  • Ultrafine sea salt: to season meat
  • Maldon: to complete the meal and give it more texture.
  • Unrefined: To finish the meal when you don’t want to feel the texture.

She captioned the clip: “Let’s talk about salt, possibly the most important ingredient in your kitchen.”

The chef noted that while most people use a salt shaker to season their food, use should be done with your fingers.

‘I have a theory that it is physically impossible to season food to the level needed when using a salt shaker.

‘You need to have the salt in a small plate so you can grab it with your fingers because that’s the only way to get enough salt.

“If you’re standing there using a shaker, you’re never going to put enough salt in your food because it’s going to take too long,” he explained.

After telling viewers about her journey with the best salts, she detailed the different types of salts in her kitchen and what she uses them for.

Have you ever made a recipe and wondered why it specifically calls for diamond kosher salt? Well, today we’re going to talk about that,’ she said as she sat behind kosher salt, sea salt, Maldon and unrefined salt.

He began describing diamond kosher salt by calling it “universally accepted by chefs as the gold standard.”

‘It is very affordable and is also minimally processed. The only ingredient here is salt.

“That’s why chefs choose Diamond Kosher as the salt they use and the reason they specify it in the recipe is because a tablespoon of Diamond Kosher will be different than a tablespoon of a different type of salt,” he explained.

Meredith added that if you are going to have any type of salt in your kitchen, it should be kosher diamond.

However, when it comes to seasoning meats, the celebrity chef revealed that she prefers to use ultra-fine sea salt.

‘Larger salt granules do not stick to the meat. That’s why I like to use ultrafine sea salt to season my meats.

“Now, I wouldn’t use this to season pasta water or to season something where the salt is just going to dissolve because that texture isn’t really going to matter,” she added.

And when texture plays a role, the chef confessed that she turns to Maldon salt, which is a little more expensive than the other options but gives the food an extra touch.

‘Now, when texture does matter is when you’ve finished the meal, that’s when I look for flaky sea salt. Now Maldon is not cheap, this is very expensive.

‘It’s expensive because you pay for the texture, you want to see those granules and feel them in your mouth. So it is best to use it only when you are finishing the meal and pour it on top as the last step,” explained the private chef.

Finally, he revealed that if he wants to finish a dish with salt on top but doesn’t want the texture, he will turn to an unrefined sea salt, which comes from Italy.

The chef and content creator admitted: “Don’t feel the need to go out and buy sea salt harvested from the coasts of Italy.”

At the end of the clip, he added, “To reiterate, you don’t need all four salts, you just need diamond kosher salt.”
